Breakfast Frittata

Breakfast just got a glow up! This quick and easy breakfast frittata is quick, hearty, and totally customizable.
Ingredients:
8 large eggs
1/4 cup milk (or cream for extra richness)
1 cup cooked sausage (pork, turkey, or plant-based — your pick!)
1 red bell pepper, diced
1 zucchini diced
1 pkg. button mushrooms
1/2 small onion, diced (optional but adds flavor)
1/2 cup shredded cheese (cheddar, Monterey Jack, or feta all work)
Salt & pepper to taste
1 tbsp olive oil or butter
Fresh herbs for garnish (like parsley or chives – optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- Sauté the veggies.
- Heat olive oil or butter in an oven-safe skillet (like cast iron) over medium heat. Add diced onion and red bell pepper. Cook until soft (about 4–5 minutes).
- Stir in the cooked sausage and cook for another minute or two until heated through. Remove from heat.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Pour the egg mixture evenly over the sausage and veggie mix in the skillet. Sprinkle cheese on top.
- Transfer the skillet to the oven and bake for 15–20 minutes, or until the center is set and the edges are golden.
- Let it cool slightly, garnish with fresh herbs if using, slice it up, and enjoy!
